From-the-land dishes feature meat steeped in Newfoundland food culture with new twists: moose pasta, rabbit risotto and deconstructed lamb ravioli. From-the-sea selections include hand-line caught Fogo Island cod, Quidi Vidi beer-steamed mussels, seared seal loin and maple-glazed salmon. Accompanying locally grown vegetables are field-foraged or pickled. McCarthy bakes berries—wild partridge, blueberries and bakeapple berries— into mouth-watering tarts, buckles, cobblers and Nan's bread pudding.
